No real recipe here... I make a batch of quinoa on Sunday and take scoops of it through out the week. This day I sauteed some apples then added a T of apricot marmalade, zest and juice of 1/2 fresh orange and then threw the quinoa in with it. It would be extra delicious with a dash of honey and some pistachios but I was pushing my dietary boundaries by adding the marmalade.
Typically I would add the baby spinach to the warm pan to wilt it slightly but I thought it would look better for the photograph this way.
